Set of thoracic and abdominal entrails consisting of the larynx, oesophagus, trachea, lungs, heart and liver of lamb, of maximum carcass weight of 14kg.
Elongated and conical shape – typical consistency of the elements – typical colour of the elements.
Served raw or cooked and packed fresh or frozen.
Presented whole with or without heart.

At the end of last year, the European Union of Offals and Giblet was established in Barcelona with the French name of Union des Tripiers Européens (UTE).
