Giblets and offal from a bovine origin

We refer to the animal in different ways depending on its age. The calf is less than one year old, while the veal is the animal between 12 and 18 months old, with a live weight between 350 and 500 kg and a carcass weight that oscillates between 180 and 200 kg. After 18 months of life, we can speak of adult cattle or, depending on the sex, cows or oxen.
